Looking at the documentation above it is unclear if I could power the OAK-D W PoE with the AUX connector while using it with ethernet on a non-PoE ethernet device.

GND is present on the AUX

VBUSIN: This pin is used for sourcing 5V power to accessory devices connected to the M8 connector. If trying to boot the device in USB boot mode, this pin can also sink current.

But can I use this pin to power the device and use with a none PoE ethernet connector?

When connecting the M8 adapter, all comms will go through M8. This would basically be the same as running a USB2.0 device.
ETH cable will play no part in this.

Theoretically it should work if you connect the USB m8 from the device directly to the charger (not a PC) since it has no way of routing communication through the USB.
I have tested this, but got errors that are FW related. Have forwarded this to the team.

So your initial request should work once we iron out the issue.
