We've been playing around with our Oak-D-SR PoE cameras and haven't used the ToF sensor yet but have learned some things about using the stereo pair that may partially answer your questions.
It seems the OV9782 cameras have notch in their IR filter to allow the IR dots / IR flood to be perceived. Normally with color cameras you want to filter out IR light as it throws off the red channel and you can get pink / purple color shifts in environments with lots of IR light (like outdoors). Since the OV9782 has this notch, there is a definitely pinkish hue when using it outdoors. We found that the tuning reduced the pink hue outdoors but does not eliminate it.
This means that the color stereo pair on this camera can benefit from structured light, but sacrifices color accuracy as a result.
